Texas Tetrazzini

Ingredients
- 16 oz Golden Grain Vermicelli
- 1 lb ground chuck
- 1 medium onion, chopped
- 1 medium green bell pepper
- 2 Tbsp chili powder
- 1 can (4 oz) chopped green chilies, drained
- 1 cup salsa
- 1 can (28 oz) diced tomatoes
- 1 (8 oz) shredded fiesta blend cheese or cheddar cheese
- Salt and pepper, to taste
Directions
- Preheat oven to 350° F. Spray a 9 x 13-inch baking dish with nonstick spray coating.
- Cook pasta according to package directions; drain.
- Cook ground beef, onion and pepper in a large skillet, over medium-high heat, stirring frequently, until beef is browned; drain. Season with salt and pepper and stir in chili powder. Add green chilies, salsa and tomatoes. Heat to a simmer.
- Stir cooked pasta into beef and tomato mixture. Stir in 1 cup cheese. Spoon into prepared dish. Cover with aluminum foil and bake 25 minutes. Sprinkle with remaining cheese and bake, uncovered, 5 minutes or until cheese is melted.
