Golden Grain Wide Egg Noodles

Ingredients
  • 12 oz. Wide Egg Noodles
  • 4 eggs
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1/3 cup melted butter
  • 1/4 cup milk
  • Salt and pepper, to taste
Directions
  1. Preheat oven to 350°F.  Spray an 11 x 17-inch baking dish with nonstick spray.  Cook pasta according to package directions; drain. Set aside to cool slightly. 
  2. In a large bowl, whisk together eggs, sour cream, cottage cheese, butter, milk, and salt and pepper.  Stir in noodles. 
  3.  Spoon into prepared baking dish. 
  4. Bake, uncovered for 45-60 minutes or until a knife inserted in the center comes out clean.
  5. For a sweeter noodle pudding, stir in 1/4 to 1/2 cub sugar into sour cream mixture.  Proceed as recipe directs.
  6. For a crunchy topping, combine 1/3 cup cornflake crumbs with 1 tablespoon melted butter.  Sprinkle crumbs over pudding before baking.
