Fresh Herb and Broccoli Rigatoni

Ingredients
  • 16 ounces Golden Grain Rigatoni
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 4 garlic cloves, minced
  • 1 pound broccoli florets
  • 1 cup vegetable broth
  • 1 tablespoon coarsely chopped fresh basil
  • 2 tablespoons chopped fresh parsley, divided
  • Pepper to taste
Directions
    1. Cook pasta according to package directions.
    2. Heat butter and olive oil in large skillet over medium-high heat. Add garlic; cook and stir until lightly browned. Add broccoli, stirring gently; cook and stir 3 minutes.
    3. Add vegetable broth. Cover and simmer until broccoli is tender. Stir in fresh basil and pasta; heat through.
    4. Sprinkle with parsley. Season with pepper to taste.
