Baked Manicotti

Ingredients
- 8 oz Golden Grain Manicotti
- 1 pkg (8 oz) shredded Italian cheese blend, divided
- 1 carton (15 oz) ricotta cheese or cottage cheese
- 2 eggs
- 1 jar (25 oz) tomato basil Italian sauce
Directions
- Preheat oven to 375ºF. Spray a 9 x 13 inch baking dish with nonstick spray.
- Cook Manicotti according to package directions; drain.
- Remove 1/2 cup of Italian cheese blend and set aside. In a small bowl, combine remaining Italian cheese blend, ricotta cheese and eggs, stirring until blended.
- Fill each Manicotti shell with cheese mixture and layer into prepared baking dish.
- Cover with Italian sauce. Bake, uncovered 30 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5 additional minutes or until cheese is melted.
- If desired, brown 1/2 pound ground meat and stir into Italian sauce; proceed as directed above. A pastry bag or zip-top bag makes filling the Manicotti easy. Fill a disposable pastry bag or a zip-top plastic food bag with the cheese filling; snip off the corner and use it to fill the Manicotti.
