Golden Grain Manicotti

Ingredients
  • 8 oz Golden Grain Manicotti
  • 1 pkg (8 oz) shredded Italian cheese blend, divided
  • 1 carton (15 oz) ricotta cheese or cottage cheese
  • 2 eggs
  • 1 jar (25 oz) tomato basil Italian sauce
Directions
  1. Preheat oven to 375ºF. Spray a 9 x 13 inch baking dish with nonstick spray.
  2. Cook Manicotti according to package directions; drain.
  3. Remove 1/2 cup of Italian cheese blend and set aside. In a small bowl, combine remaining Italian cheese blend, ricotta cheese and eggs, stirring until blended.
  4. Fill each Manicotti shell with cheese mixture and layer into prepared baking dish.
  5. Cover with Italian sauce. Bake, uncovered 30 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5 additional minutes or until cheese is melted.
  6. If desired, brown 1/2 pound ground meat and stir into Italian sauce; proceed as directed above. A pastry bag or zip-top bag makes filling the Manicotti easy. Fill a disposable pastry bag or a zip-top plastic food bag with the cheese filling; snip off the corner and use it to fill the Manicotti.
